I sometime makes this as a stuffed paratha - with cooked onions, cauliflower and masala etc. But, this is a simpler version. In fact, when I was all done and started eating, I realized that I had totally forgot to put onions in it! I love the flavor of onions and add it to everything. But, this paratha did turn out great even without onions.
I had some grated cauliflower at home. You can just grate them using a food processor or by hand.
You can also try the same paratha with other veggies - like cabbage or carrots or mixed veggies.
Here are the ingredients reqd -
Atta - about 1 1/2 cups
Grated Cauliflower - 1 cup
Fresh cut green chillies - about 2-3
Fresh cut Ginger - about 1 inch piece chopped into small bitable bits
Red Chilli Powder
Tumeric powder
Salt
Mix all of the ingredients above and knead into a chappathi dough consistency.
Make slightly thick round parathas.
When you remove from the tawa, just add ghee using the back of a spoon - that way you won't add too much - keep it healthy. I don't add ghee while cooking coz that takes up a lot of ghee and makes the parathas heavy.
Here's my plate of parathas with Moong Daal and Apple Thokku (recipe available here). If you like Dahi, eat this paratha with pickle and dahis - the perfect combo.
Store in a casserole so they are hot until you serve.
