I saw these on an episode of Paula Deen's show. Loved the idea and the simplicity of making these! I've made it a few times now and its always been welcome with big smiles and everyone who has eaten these have always loved them too. So, this has now become a hall of famer in my appetizer team!
All you need is a few ingredients. Some Fillo dough, some fresh asparagus, some parmesan cheese and a little butter for brushing. You can optionally add red chilli flakes or oregano for a little kick.
Thaw the sheets a little bit so that they are easy to work with. Cut long strips approx about 3 -4 inch wide. Then, pick 3 sheets for each roll and cover the remaining so they remain moist. These do dry out real quick.
Brush just the sheet on top with a little butter. Then, sprinkle some parmesan cheese. You can also add any other seasoning you like. I added a little dried oregano too for some flavor.
Wash all your aspragus and drain the water on a paper towel. Then, snap off the hard edges so that you have about 3/4 of the top tender part left.
Place one asparagus at the bottom of the sheet and start rolling it up.
After a couple of turns, place another asparagus and roll out.
And then, place another one. You can place 3-4 asparagus depending on how thick or tender they are. Mine were really thin and tender. So, I went upto 4 on some of the rolls.
After you roll them completely, place them seam side down on a baking sheet. Brush with a little butter on top of the roll again.
And top off with a little sprinkle of parmesan cheese again.
Place them in a preheated oven at 375F for about 10-12 mins or until you see the tops turn golden. Do check the fillo dough box for the recommended temperature to bake.
And they are done..how easy was that?
Perfect rolls to pop into your mouth. Not the whole thing but in a few bites!
I made a couple of big batches of these for a party...really..and you thought these were only for me?? Nah. That will be some other day and you can be sure that will not be posted...it'll be my own secret!

So these rolls might very well be my one-night stand with asparagus before I dive into a long-standing affair with them! Pray that I get into that affair, so then, I could join you for that dinner :)
